Emna CHICHTI has obtained the award of the best presentation during the latest ICC “International Association for Cereal Science and Technology” international conference organised from the 25 to the 28 august in Fremantle, Perth, Australia.

Emna CHICHTI is currently a PhD student with the Joint Research Centre IATE under the supervision of Valérie Lullien-Pellerin and Jean-Yves Delenne. She has obtained the award of the best presentation in Perth for her talk about “A new step in the construction of wheat endosperm modelling to predict mechanical behaviour”. A novel Atomic Force Microscopy scratching methodology was developed and coupled to a mathematical model to determine the nano-mechanical properties of wheat main polymers (starch and a protein network called gluten). She also characterized the interface between polymers in wheat grain differing by hardness. These properties were then used to complete the numerical modelling of wheat fractionation.
